Coffee Mocha Coconut Frappuccino

This cold coffee blend is perfect for beating the summer heat (and getting a caffeine buzz at the same time ;-) Enjoy!

1/2 cup shredded coconut (You can find it in the baking aisle of the grocery store)

3/4 cup double strength or espresso coffee

1 cup low-fat milk

1/3 cup Hershey's chocolate syrup

3 tablespoons granulated white sugar

2 cups ice

Garnish: whipped cream (I use Cool Whip lite)
Note: It was just too darned hot today to turn on the oven at my house! I skipped the part about toasting the coconut. It still tasted great though.

1. Preheat oven to 300 degrees. Spread shredded coconut on a baking sheet and toast coconut in the oven. Stir the coconut around every 10 minutes or so for even browning. After about 25 minutes the shredded coconut should be light brown. Allow it to cool.

2. Make double strength coffee by brewwing twice the coffee required by your coffeemaker. That should be 2 tablespoons of ground coffee per each cup of coffee. Chill before using. I did this in the morning right after my morning cup and put it in the fridge so it was nice and chilly by afternoon.

3. To make the drinks, combine cold coffee, milk, 1/3 cup of the toasted coconut, the chocolate syrup, and sugar in a blender. Blend for 15 to 20 seconds to dissolve the sugar.
Add ice and blend until ice is crushed and the drink is smooth. Pour drinks into two 16 ounce glasses. Garnish each glass with whipped cream, a drizzle of chocolate, and a pinch of the remaining toasted coconut. Add a straw.

Serves 2.

Now for the scary part:

288 calories per drink.

You can maybe get around a portion of the calorieage by replacing the sugar w splenda, using skim milk, cool whip free, and hershey's sugar free syrup. But the truth is that most of the calories in this drink comes from the coconut. To me the calories saved doesn't seem worth sacrificing the taste. So I went all out with this one (and I'll just skip dinner ;-)

i bet it tastes good, but sounds like it would give me direa, oh well you gotta take the bad with the good, i enjoy my magazine time anyway.

Adam + coffee + milk = definite diarrhea! Lol!

I think lots of men out there would agree about the "magazine time" thing. Just one of those things men do, I guess...
